Diamond Knot India Pale Ale. Starting gravity was a whopping 1.090, sadly the final gravity was a 1.020. This means that it never completely fermented. ABV Rating was a decent 9.5%. Batch was started on 3 July, bottled on the 24th. I added 1 lb of Belgian Rock Candy (clear),
3 lbs extra light DME, with 2 tsp. gypsum, 1 tsp. amylase enzyme, 1 Tbsp. yeast energizer. The box OG is stated at 1.056-1.075. I used a package of Lalvin's EC-1118 Champagne Yeast in the secondary fermenter. Didn't help at all.Site Menu:
